Norwegian Cherry Tomatoes
with Stracciatella, Basil Oil, Tomato and Elderflower Broth, and Smoked Cod

Smoked cod, finely chopped
Microgreens (cress, daikon, or mizuna)
Seasoned Tomatoes
Cherry tomatoes
Fresh basil
Olive oil
Lemon juice
Maldon Salt
Tomato and Elderflower Broth
Peeled tomatoes
Elderflower syrup

Seasoned Tomatoes
Cut cherry tomatoes into quarters and season with fresh basil, olive oil, lemon juice, and Maldon Salt.

Tomato and Elderflower Broth
Blend peeled tomatoes and strain through a cloth, then season with elderflower syrup.

Plating
Pour the broth into a bowl, arrange the tomatoes, add a scoop of stracciatella, and place finely chopped smoked cod around. Garnish with microgreens like cress, daikon, or mizuna.
